AGED SUR LEE
We do not rack our wines, but leave them on their yeast and sediment during their stay in the cellar.  This is a very old, traditional wine-making style, and results in very well developed, well structured wines.  Sur Lee aged wines typically require decanting prior to dinking, in order to blow off the CO2 that results from the bottling process.
 
Allier Barrique
Our wine barrles are cut from select Allier Forrest Oak, aged in Cognac for 30+ months, toasted over an open fire, and constructed by some of the top craftsman in Bourgogne.
 
                                                                              Terroir
Our clay vineyard produces intense bouquets and flavors and is especially suited to adding great complexities of sweet minerals to our wines.  Most of our estate bottled wines have a unique mineral characteristic which produces a translation of our terroir into wines of distinction.  Some of the finest, and most expensive wines in France are grown in clay soils, where the complexity of the wine is greatly enhanced.
